Basic Boiled Dry Beans

Wash beans, place in a bowl, and cover with 3 inches of cold water. Let soak overnight or 6 to 8 hours. Drain the beans and discard soaking water.

Place kombu, soaked beans and 1 1/2 cups water in a heavy pot. Bring to a boil. Reduce the flame to medium-low and simmer for 10 minutes, skimming off and discarding any foam. Cover the beans and simmer on low for 1 hour or until 80% done. If more water is needed during cooking, add as small an amount as needed to just keep the beans covered. Add sea salt, cover and simmer for another 15 to 20 minutes until tender.
